Ingredients
- 4 tablespoons butter
- 1 large onion finely chopped
- 1 red bell pepper chopped
- 2 cups chopped mushrooms
- 4 asparagus spears chopped
- 2 –3 ripe tomatoes chopped or crusheD
- 1 teaspoon paprika
- 1/2 teaspoon sea salt adjust to taste
- 1/4 teaspoon black pepper
- 6-8 eggs lightly scrambled
- Fresh parsley chopped, for garnish
Instructions
- Melt butter in a large skillet over medium heat.
- Add onion, mushrooms, bell peppers, and asparagus. Sauté 5 minutes until softened and fragrant.
- Stir in tomatoes, paprika, sea salt, and black pepper.
- Cover and simmer 10 minutes until tomatoes soften and release their juices.
- Gently pour scrambled eggs into the skillet.
- Stir lightly to distribute the eggs throughout the tomatoes.
- Simmer uncovered 3–5 minutes until eggs are softly set and tender.
- Remove from heat and serve warm with fresh parsley.
