  • 1 teaspoon paprika

  • 1/4 teaspoon black pepper
  • 6-8 eggs lightly scrambled
  • Fresh parsley chopped, for garnish

Instructions
 

  • Melt butter in a large skillet over medium heat.
  • Add onion, mushrooms, bell peppers, and asparagus. Sauté 5 minutes until softened and fragrant.
  • Stir in tomatoes, paprika, sea salt, and black pepper.
  • Cover and simmer 10 minutes until tomatoes soften and release their juices.
  • Gently pour scrambled eggs into the skillet.
  • Stir lightly to distribute the eggs throughout the tomatoes.
  • Simmer uncovered 3–5 minutes until eggs are softly set and tender.
  • Remove from heat and serve warm with fresh parsley.
