Ingredients
- 1 cup cottage cheese
- 1 cup oat flour certified gluten-free if needed
- 1 teaspoon sea salt divided
- 2 tablespoons grass-fed butter or ghee
- 1 garlic clove finely minced
- 2 tablespoons chopped parsley chives, dill, or mixed herbs (optional)
Instructions
- Add cottage cheese, oat flour, ½ teaspoon sea salt, and herbs (if using) to a food processor.
- Blend until a soft dough forms.
- Transfer dough to a lightly floured surface.
- Gently knead a few times until smooth.
- Divide dough into 4 portions.
- Roll each portion into a thin round approximately ¼-inch thick.
- Heat a nonstick skillet over medium-high heat.
- Cook each flatbread for 3–4 minutes per side until golden brown with light charred spots.
- While cooking, melt butter or ghee and stir in garlic and remaining sea salt.
- Brush warm flatbreads with garlic butter immediately after cooking.
