Add cottage cheese, oat flour, ½ teaspoon sea salt, and herbs (if using) to a food processor.
Blend until a soft dough forms.
Transfer dough to a lightly floured surface.
Gently knead a few times until smooth.
Divide dough into 4 portions.
Roll each portion into a thin round approximately ¼-inch thick.
Heat a nonstick skillet over medium-high heat.
Cook each flatbread for 3–4 minutes per side until golden brown with light charred spots.
While cooking, melt butter or ghee and stir in garlic and remaining sea salt.
Brush warm flatbreads with garlic butter immediately after cooking.
Serve warm.
