Ingredients
For the Bowl
- 2 cups cooked white or brown rice preferably warm
- 1 cup ripe mango diced
- 1 cup shelled edamame steamed until tender
- 1 large ripe avocado sliced or diced
- 1 cup finely shredded romaine lettuce
- 1/4 cup roasted cashews almonds or peanuts, roughly chopped
- 2 green onions thinly sliced
- 1 tablespoon sesame seeds
Crispy Tofu
- 1 14-ounce block firm tofu, drained and cut into 3/4-inch cubes
- 1 tablespoon extra-virgin olive oil or avocado oil
- 1 tablespoon coconut aminos or reduced-sodium tamari
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Pinch of sea salt
Lime-Sesame Dressing
- 4 tablespoons toasted sesame oil
- 4 tablespoons unseasoned rice vinegar
- 2 teaspoons honey or pure maple syrup
- 2 teaspoons coconut aminos or reduced-sodium tamari
- Juice of 1 fresh lime
- Chef’s note: Toasted sesame oil is quite flavorful. If you prefer a lighter dressing use 2 tablespoons toasted sesame oil + 2 tablespoons extra-virgin olive or avocado oil in place of the 4 tablespoons sesame oil. I particularly like this variation because the sesame remains noticeable without dominating the mango and lime.
Table to Blenderâ„¢ Recovery Serving
- 1/2 cup warm cooked white rice
- 1/4 ripe avocado
- 1/4 cup ripe mango
- 1/4 cup steamed shelled edamame*
- 1/3 cup cooked tofu preferably taken from the center/softer pieces rather than the crispest edges
- 1-2 teaspoons Lime-Sesame Dressing or to taste
- 1/3–3/4 cup warm low-sodium vegetable broth or warm water as needed
- Pinch of sea salt optional
For very smooth or earlier-stage blended textures, edamame may be omitted because its skins can leave fine particles.
Instructions
Prepare the Tofu
- Drain the tofu and gently press it between clean kitchen towels or paper towels to remove excess moisture.
- Cut into approximately 3/4-inch cubes.
- Place the tofu in a bowl and gently toss with the oil, coconut aminos or tamari, garlic powder, paprika and a small pinch of sea salt.
Cook Until Golden
- Heat a large nonstick or well-seasoned skillet over medium to medium-high heat.
- Add the tofu in a single layer, leaving a little room between the pieces.
- Cook for approximately 10–15 minutes, turning every few minutes, until lightly crisp and golden on several sides.
- Oven method: Arrange the seasoned tofu on a parchment-lined baking sheet and bake at 425°F for approximately 20–25 minutes, turning halfway through, until golden around the edges.
Set aside.
- Prepare the Bowl Ingredients
- While the tofu cooks, steam the edamame until tender.
- Dice the mango, slice the avocado, finely shred the romaine and thinly slice the green onions.
- If using refrigerated cooked rice, warm it before assembling the bowls.
Make the Lime-Sesame Dressing
- In a small bowl or jar, combine the sesame oil, rice vinegar, honey or maple syrup, coconut aminos and fresh lime juice.
- Whisk vigorously or cover and shake until emulsified.
- Taste and adjust if necessary. The finished dressing should have a balance of nutty, bright, savory and gently sweet flavors.
Build the Glow Bowls
- Divide the warm rice among four bowls.
- Arrange the mango, edamame, avocado, crispy tofu and shredded romaine in sections over the rice rather than mixing everything together.
- Finish with roasted nuts, sliced green onions and sesame seeds.
- Drizzle lightly with the Lime-Sesame Dressing just before serving. Serve additional dressing at the table.

This bowl is particularly adaptable because its primary ingredients become naturally creamy when blended. Avocado provides richness, mango contributes moisture and gentle sweetness, tofu adds soft plant protein, and rice gives the purée enough body to feel like a meal.
The crunchy garnishes and raw vegetables are intentionally left out rather than blending the entire assembled bowl.
- Place the warm rice, avocado, mango, tofu and, when appropriate, edamame in a high-speed blender.
- Add 1 teaspoon of the Lime-Sesame Dressing and 1/3 cup warm broth.
- Blend on high until completely smooth.
- Stop and scrape down the blender as necessary. Continue adding warm broth or water, 1–2 tablespoons at a time, until the appropriate texture is reached.
- Taste and add the remaining teaspoon of dressing if desired.
- For a spoonable purée, keep the mixture thick and silky.
- For a thinner blended meal, gradually add additional broth until easily pourable.
- For an ultra-smooth texture, omit the edamame and pass the finished mixture through a fine-mesh sieve.
- Serve warm or at room temperature.
