Ingredients
Brown Rice Comfort Cereal
- ½ cup brown rice rinsed
- 2 cups filtered water
- ½ cup unsweetened almond milk or coconut milk
- Pinch sea salt
- ½ teaspoon ground cinnamon
- 1 teaspoon pure maple syrup or raw honey optional
Warm Berry Purée
- 1 cup fresh or frozen mixed berries
- 2 –3 tablespoons water
- 1 teaspoon pure maple syrup or raw honey optional
Optional Toppings
- Fresh raspberries
- Mint leaves
- Additional cinnamon
- Unsweetened yogurt
- Ground flaxseed
Instructions
Prepare the Rice Cereal
- Add brown rice, water, and sea salt to a medium saucepan.
- Bring to a gentle boil.
- Reduce heat to low, cover, and simmer for 25–30 minutes until the rice is very soft and tender.
- Stir in almond milk and cinnamon.
- Continue cooking 2–3 minutes until creamy.
- Stir in maple syrup if desired.
Prepare the Warm Berry Purée
- While the rice cooks, place berries and water in a small saucepan.
- Simmer over low heat for 5–7 minutes until berries soften.
- Blend or mash until smooth.
- Stir in maple syrup if desired.
Assemble
- Divide cereal between bowls.
- Spoon warm berry purée over the top.
- Garnish as desired and serve warm.
