Add water, ginger, lemon slices, star anise, and cloves to a small saucepan.
Bring to a gentle simmer over medium heat.
Reduce heat and simmer for 10 minutes.
Remove from heat and allow to steep for an additional 5 minutes.
Strain into a pitcher or directly into mugs.
Stir in raw honey while warm (not boiling).
Garnish with fresh mint or additional lemon slices if desired.
Serve warm or chilled.
